Colombia is one of the most iconic origins in coffee production. Over the past few decades, the country’s coffee industry has pivoted from being a large-scale export powerhouse towards a focus on promoting smaller, family-owned farms. This shift has resulted in a major improvement in coffee quality, as coffee cherries on smaller farms are picked mostly by hand, allowing the farmers to select only perfectly ripened beans.
This coffee comes from the Timaná region, located in the mountain valley of the Magdalena river between the two main branches of the Colombian Andes. The coffee cherries were pulped and fermented for one day, then washed with mountain spring water and sun-dried. This process produces a clean cup with a unique flavor profile, full body, and citrus-like acidity.
